Lean Herbed Omelett


Content


4 egg whites
1 whole egg
¼ cup low-fat milk
freshly ground back pepper to taste
½ tsp sea salt
olive oil spray

tomatoes
red onion

Instructions


Preheat oven to boiler setting

In a small deep bowl whisk all ingredients, except olive oil spray. The mixture should begin to look light and airy.

Spray an oven-safe pan with olive oil spray. Heat over medium-heat on stove top. Pour egg mixture into pan and let cook until partially set. The edges will cook first. Cook for 2 to 3 minutes.

Add tomatoes and onion. Place the pan in oven under boiler. The omelette should puff up and become golden brown on top in about 2 minutes.

Remove pan from oven and loosen the edges of the omelette with a spatula and fold over. Then slide the omelette onto a warmed plate and serve.
